Keramo

A real treat

This month we bring you a real treat from the Bombe mountains in Ethiopia – a washed JARC 74112 from the Keramo washing station.

This coffee is grown by 381 small farmers in the area around the washing station, which is typical of Ethiopian coffees. Most farmers have only a few hectares of land, while others simply pick the coffee that grows naturally on their property.

Aroma and taste

This coffee has an almost nostalgic and classic washed Ethiopian flavor profile that we all know and love. It has lots of complex fruitiness and floral aromas, while being delicate and tea-like.

When you take the first sip, raspberries, sweet citrus fruits and bergamot hit you in the mouth. When the coffee then cools down, the acid falls out of the taste, and the coffee becomes sweet and peachy.

The farm

The Keramo laundry is known locally for its high quality in picking, sorting and processing. They have placed in the top 10 in the Ethiopian Cup of Excellence three years in a row.

The extraordinary altitude of 2260-2360 meters above sea level results in a slow ripening process and a dense and hard bean. This means that the coffee will develop more complexity, intensity and aroma, and that it retains its aromatic qualities better. The coffee also requires a longer resting period before it opens up in the cup – we recommend at least 7 days.

Our recipe

Keramo hand brew

Lately, we've been absolutely delighted with the results when we extend the coffee's bloom. This makes the extraction more even and gives a cleaner and sweeter brew.

Try our recommended recipe for a delicious brew with Keramo:

You will need that
24g ground coffee (32 clicks of Comandante or 850-950 microns)
400g filtered water / 95°C

Pour-over guide
Start the timer and pour 50g of water until the coffee blooms (remember to cover all the coffee)
At 1:30 pour up to 400g of water in approx. 1 minute

The coffee should be ready after 3 to 4 minutes based on your grinder and grind level.
